Description

A hearty and satisfying dish made with eggs, fresh spinach, and creamy feta, perfect for brunch or dinner.


Ingredients

Scale
  • 3 teaspoons olive oil
  • 34 cups fresh spinach, washed
  • 1 whole egg
  • 1 ounce crumbled feta
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius).
  2. In a pan, drizzle 1 teaspoon of olive oil and gently sauté the spinach for about 2-3 minutes until it wilts.
  3. Transfer the sautéed spinach into a small heatproof ceramic casserole dish.
  4. Drizzle the remaining 2 teaspoons of olive oil over the spinach and mix gently.
  5. Crack an egg over the spinach, letting the yolk nestle in.
  6. Sprinkle crumbled feta on top and add a pinch of salt and pepper.
  7. Bake for about 18-20 minutes until the egg white is set and the yolk is still soft.
  8. Serve it immediately and enjoy!

Notes

Make sure not to overcook the egg for a runny yolk, and feel free to experiment with additional ingredients like garlic or different cheeses.
