- 1 cup cottage cheese
- 2 large eggs
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup fresh or frozen blueberries
- Pinch of salt
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract.
- In another bowl, mix the rolled oats, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin liners.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack. Enjoy your delicious muffins!
