Description

A hearty and nutritious breakfast casserole featuring butternut squash, sausage, and spinach, perfect for a power-packed start to your day.


Ingredients

  • 1/2 lb. lean ground turkey sausage
  • 2 tsp. olive oil
  • 2 cups butternut squash, peeled and diced
  • 1/2 red onion, diced
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. oregano
  • 1/2 tsp. pepper
  • 4 cups spinach, chopped
  • 4 eggs
  • 4 egg whites

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Heat a skillet over medium-high heat and add the sausage, cooking until no longer pink.
  3. Remove the sausage and set aside.
  4. Add olive oil to the skillet, then add butternut squash and red onion; cook for 8-10 minutes until tender.
  5. Add salt, garlic powder, oregano, and pepper, stirring to combine.
  6. Toss in spinach and cook until wilted, about 1-2 minutes.
  7. Whisk together the eggs in a bowl until light and airy.
  8. Spread the sausage and vegetable mixture in a baking dish, then pour the whisked eggs over the top.
  9. Bake for 25-30 minutes until the eggs are set.
