- 1/2 lb. lean ground turkey sausage
- 2 tsp. olive oil
- 2 cups butternut squash, peeled and diced
- 1/2 red onion, diced
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. oregano
- 1/2 tsp. pepper
- 4 cups spinach, chopped
- 4 eggs
- 4 egg whites
Instructions
- Preheat the oven to 400 degrees F.
- Heat a skillet over medium-high heat and add the sausage, cooking until no longer pink.
- Remove the sausage and set aside.
- Add olive oil to the skillet, then add butternut squash and red onion; cook for 8-10 minutes until tender.
- Add salt, garlic powder, oregano, and pepper, stirring to combine.
- Toss in spinach and cook until wilted, about 1-2 minutes.
- Whisk together the eggs in a bowl until light and airy.
- Spread the sausage and vegetable mixture in a baking dish, then pour the whisked eggs over the top.
- Bake for 25-30 minutes until the eggs are set.
