- 2 whole wheat tortillas
- 1 cup cooked chicken, shredded
- 1/2 cup Greek yogurt
- 1 cup fresh spinach, chopped
- 1/2 cup bell peppers, diced
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup lettuce, shredded
- 1/4 cup salsa
- Salt and pepper, to taste
- 1/4 cup tortilla chips, crushed
Instructions
- In a bowl, combine the shredded chicken, Greek yogurt, spinach, bell peppers, cheese, and salsa. Season with salt and pepper to taste.
- Lay one tortilla flat and spread half of the chicken mixture in the center.
- Top with a handful of crushed tortilla chips, lettuce, and additional salsa if desired.
- Fold in the sides of the tortilla, then roll it up from the bottom to the top to form a wrap.
- Repeat with the second tortilla.
- For added crunch, grill the wrap on a skillet for 2-3 minutes on each side until golden brown.
- Slice in half and serve immediately or wrap in foil for meal prep.
Notes
Ensure not to overstuff your wrap for easy rolling. Use rotisserie chicken for a quicker option or swap Greek yogurt for hummus for a different flavor.
