Description

A nutritious and flavorful wrap that combines shredded chicken, fresh vegetables, and creamy Greek yogurt for a satisfying meal.


Ingredients

  • 2 whole wheat tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup Greek yogurt
  • 1 cup fresh spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup lettuce, shredded
  • 1/4 cup salsa
  • Salt and pepper, to taste
  • 1/4 cup tortilla chips, crushed

Instructions

  1. In a bowl, combine the shredded chicken, Greek yogurt, spinach, bell peppers, cheese, and salsa. Season with salt and pepper to taste.
  2. Lay one tortilla flat and spread half of the chicken mixture in the center.
  3. Top with a handful of crushed tortilla chips, lettuce, and additional salsa if desired.
  4. Fold in the sides of the tortilla, then roll it up from the bottom to the top to form a wrap.
  5. Repeat with the second tortilla.
  6. For added crunch, grill the wrap on a skillet for 2-3 minutes on each side until golden brown.
  7. Slice in half and serve immediately or wrap in foil for meal prep.

Notes

Ensure not to overstuff your wrap for easy rolling. Use rotisserie chicken for a quicker option or swap Greek yogurt for hummus for a different flavor.
