Description

Delicious and nutritious muffins packed with cottage cheese, eggs, and fresh vegetables, perfect for breakfast or brunch.


Ingredients

  • 1 lb turkey breakfast sausages (removed from the casing)
  • 4 eggs
  • ¼ cup milk
  • 1 cup 2% cottage cheese
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 cups chopped vegetables (broccoli, spinach, etc.)
  • 3 green onions (sliced finely)
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Preheat your oven to 400°F.
  2. Remove the sausages from the casing and cook in a skillet over medium-high heat until browned. Set aside to cool.
  3. In a large bowl, whisk together eggs, milk, cottage cheese, olive oil, and maple syrup.
  4. Add flour, baking powder, and salt to the mixture and mix gently.
  5. Stir in cooked sausages, vegetables, green onions, and cheese (reserving some cheese for topping).
  6. Divide the batter evenly among 12 muffin cavities. Top with additional cheese.
  7. Bake for 23-27 minutes until tops are golden and a toothpick comes out clean.
