Description

A quick and nutritious breakfast option featuring creamy cottage cheese and vibrant vegetables on toasted bread.


Ingredients

Scale
  • 2 slices of bread (whole grain or sourdough)
  • 1/2 cup tomato sauce
  • 1/4 cup zucchini, shredded
  • 1/4 cup spinach, chopped
  • 1/2 cup cottage cheese
  • 1/4 cup cherry tomatoes, halved
  • Fresh basil for garnish

Instructions

  1. In a small bowl, mix together the tomato sauce and shredded zucchini until fully combined.
  2. Spread the tomato sauce/zucchini mixture evenly onto both slices of bread.
  3. Top with chopped spinach.
  4. Spread 1/4 cup of cottage cheese onto each slice.
  5. Finish with halved cherry tomatoes, cut-side up.
  6. Air fry at 390°F for about 8 minutes, checking halfway for even browning.
  7. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the air fryer or microwave as needed.
