Ingredients

- 2 slices of bread (whole grain or sourdough)
- 1/2 cup tomato sauce
- 1/4 cup zucchini, shredded
- 1/4 cup spinach, chopped
- 1/2 cup cottage cheese
- 1/4 cup cherry tomatoes, halved
- Fresh basil for garnish
Instructions
- In a small bowl, mix together the tomato sauce and shredded zucchini until fully combined.
- Spread the tomato sauce/zucchini mixture evenly onto both slices of bread.
- Top with chopped spinach.
- Spread 1/4 cup of cottage cheese onto each slice.
- Finish with halved cherry tomatoes, cut-side up.
- Air fry at 390°F for about 8 minutes, checking halfway for even browning.
- Garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the air fryer or microwave as needed.
