- 1 large egg
- ¾ oz / 20g feta cheese
- 1 small tortilla or slice of toasted bread
- ¼ avocado
- Dried oregano
- Red pepper flakes
- Cooking oil spray or olive oil spray
- Lemon juice
- Pickled onions (for garnish)
- Chili oil (for garnish)
Instructions
- In a small fry pan, add a spray of cooking oil and crumble over the feta cheese.
- Allow the feta cheese to sizzle over medium heat for a couple of minutes to melt.
- Gently crack the egg in the center of the pan, letting the yolk embrace the cheese.
- Season the egg with dried oregano and red pepper flakes.
- Cook the egg to your liking and keep the cheese sizzling.
- Warm the tortilla on a stove, oven, or microwave.
- Smash the avocado on top of the tortilla and squeeze lemon juice over it.
- When the egg is cooked with a golden cheese crust, place it on the tortilla.
- Garnish with pickled onions and chili oil, then enjoy!
Notes
For the best results, use the freshest eggs possible. You can swap feta with goat cheese for a different flavor.
