Description

A comforting and easy crock pot dish featuring tender chicken and creamy rice, perfect for busy weeknights.


Ingredients

  • 2 boneless skinless chicken breasts, cut into 1 inch pieces
  • 1 teaspoon minced garlic
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 onion, chopped
  • 3 cups chicken broth
  • 1 can cream of chicken soup (10.5 oz)
  • 1 1/2 cups brown rice (uncooked)
  • 2 cups cheddar cheese (shredded)

Instructions

  1. Place the chicken, garlic, salt, pepper, onion, chicken broth, cream of chicken soup, and brown rice in the crock pot. Stir to thoroughly combine all the ingredients.
  2. Cover and cook on high for 3.5-4 hours until the rice has absorbed all the chicken broth in the crock pot.
  3. Stir in the shredded cheese. Cover and allow the heat from the meal to melt the cheese for 5-7 minutes.
  4. Serve warm and enjoy!

Notes

For added flavor, consider using homemade chicken broth and including seasonal vegetables like spinach.
