Description

This hearty and comforting soup is packed with Italian sausage, potatoes, and a creamy base, making it a perfect meal for chilly evenings.


Ingredients

  • 1 lb ground Italian sausage
  • 4 russet potatoes (peeled and diced)
  • 4 cups chicken broth
  • 1 tablespoon minced garlic
  • 1/2 onion (chopped)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup heavy whipping cream
  • 1/4 cup parmesan cheese (for serving)

Instructions

  1. Brown the ground sausage in a skillet over medium heat and drain any remaining fat.
  2. Add the browned sausage to your crock pot.
  3. Place in the minced garlic, onion, diced potatoes, salt, pepper, and chicken broth into the crock pot. Stir everything to mix.
  4. Cover the crock pot and cook on low for 5-6 hours or on high for 3 hours.
  5. Stir in the heavy whipping cream. Cover and cook on low for 10-15 more minutes until the cream is heated through.
  6. Serve warm topped with parmesan cheese.

Notes

This soup can be refrigerated for up to 5 days. Be sure to store leftovers in an airtight container.
