Ingredients

- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup diced vegetables (bell peppers, spinach, onions, or your choice)
- 1/2 cup shredded cheese (cheddar or feta)
- Salt and pepper to taste
- Optional: cooked bacon or sausage, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the eggs and cottage cheese until smooth and fluffy.
- Stir in the diced vegetables and shredded cheese.
- If using, add the cooked bacon or sausage and mix well.
- Grease a muffin tin and pour the egg mixture evenly into each cup, filling them about 2/3 full.
- Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
- Let them cool slightly before removing from the tin.
- Store in the refrigerator for busy mornings.
Notes
These egg bites can be stored in the fridge for up to a week or frozen for up to three months. Reheat in the microwave for about 30 seconds.
