Description

Delicious, protein-packed egg bites perfect for a quick and nutritious breakfast.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup diced vegetables (bell peppers, spinach, onions, or your choice)
  • 1/2 cup shredded cheese (cheddar or feta)
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs and cottage cheese until smooth and fluffy.
  3. Stir in the diced vegetables and shredded cheese.
  4. If using, add the cooked bacon or sausage and mix well.
  5. Grease a muffin tin and pour the egg mixture evenly into each cup, filling them about 2/3 full.
  6. Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
  7. Let them cool slightly before removing from the tin.
  8. Store in the refrigerator for busy mornings.

Notes

These egg bites can be stored in the fridge for up to a week or frozen for up to three months. Reheat in the microwave for about 30 seconds.
