Ingredients

  • 1/4 block feta cheese
  • 2 large eggs
  • Salt, pepper, and spices of choice (like oregano or basil)
  • Optional: Vegetables (spinach, diced onions, cherry tomatoes)

Instructions

  1. Preheat your oven to 350°F and spray a small oven-safe baking dish with olive oil.
  2. Add the feta to the center of the baking dish and crack the eggs around it.
  3. Sprinkle salt, pepper, and any other desired seasonings or vegetables.
  4. Bake in the oven for 8-12 minutes until egg whites are set and yolk still wobbles slightly.
  5. Let cool for a couple of minutes and gently mash the eggs and feta together with a fork.
