- 1 Tbsp. oil
- 1 lb. potatoes (about 2 medium), diced
- 1 lb. lean ground beef
- 1 and ½ tsp. salt
- ½ tsp. pepper
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- ½ tsp. smoked paprika
- 1 cup shredded Cheddar cheese
- 2 green onions, chopped
Instructions
- Heat the oil in a large non-stick skillet over medium-high heat.
- Add the potatoes in a single layer and cook undisturbed for about 2 minutes until lightly browned.
- Stir the potatoes and cook undisturbed for another 2 minutes until crispy.
- Move the potatoes to one side and add the ground beef to the other side, seasoning both with salt and pepper.
- Cook the beef undisturbed for 4 minutes, stirring the potatoes occasionally.
- Scoop off any excess fat from the beef if necessary.
- Add onion, bell pepper, garlic, and paprika on top of the beef and potatoes; stir and cook until the vegetables are softened and beef is no longer pink, about 3-4 minutes.
- Turn off heat and sprinkle cheese on top; allow it to melt in the residual heat.
- Top with green onions and serve.
Notes
For different flavors, try adding jalapeños for heat or using a mix of potato types for varied textures.
