Description

A hearty and satisfying skillet meal featuring ground beef, crispy potatoes, and melted cheddar cheese, perfect for family dinners.


Ingredients

  • 1 Tbsp. oil
  • 1 lb. potatoes (about 2 medium), diced
  • 1 lb. lean ground beef
  • 1 and ½ tsp. salt
  • ½ tsp. pepper
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • ½ tsp. smoked paprika
  • 1 cup shredded Cheddar cheese
  • 2 green onions, chopped

Instructions

  1. Heat the oil in a large non-stick skillet over medium-high heat.
  2. Add the potatoes in a single layer and cook undisturbed for about 2 minutes until lightly browned.
  3. Stir the potatoes and cook undisturbed for another 2 minutes until crispy.
  4. Move the potatoes to one side and add the ground beef to the other side, seasoning both with salt and pepper.
  5. Cook the beef undisturbed for 4 minutes, stirring the potatoes occasionally.
  6. Scoop off any excess fat from the beef if necessary.
  7. Add onion, bell pepper, garlic, and paprika on top of the beef and potatoes; stir and cook until the vegetables are softened and beef is no longer pink, about 3-4 minutes.
  8. Turn off heat and sprinkle cheese on top; allow it to melt in the residual heat.
  9. Top with green onions and serve.

Notes

For different flavors, try adding jalapeños for heat or using a mix of potato types for varied textures.
