Description

A hearty and protein-rich soup combining Italian sausage, white beans, and vibrant kale for a comforting meal.


Ingredients

Scale
  • 1 bunch kale, chopped
  • 1 can white beans, drained and rinsed
  • 1 lb Italian sausage, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp dried oregano
  • Salt to taste
  • Pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic, sauté until softened, about 3 to 5 minutes.
  3. Add the sausage and cook until browned, stirring occasionally.
  4. Stir in the kale, white beans, tomatoes, broth, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  6. Adjust seasoning as necessary, tasting for salt and acidity.
  7. Serve hot, optionally garnished with olive oil or Parmesan.

Notes

For a lighter version, use turkey sausage or low-sodium broth. If freezing, add fresh kale when reheating.
