- 1/2 onion, diced
- 1 lb. ground beef
- 15 oz. diced tomatoes, canned
- 1 1/2 cups mixed veggies (peas and carrots)
- 3/4 cup white rice
- 2 cups beef broth
- 1 tsp dried oregano
- 1 tsp garlic salt
- 1/2 tsp dried basil
- 1/2 tsp pepper
- 1 1/2 cups mozzarella cheese
Instructions
- Brown the ground beef and onion in a large skillet over medium heat until the beef is no longer pink, draining any excess fat.
- Add the diced tomatoes, mixed veggies, rice, broth, oregano, garlic salt, basil, and pepper to the skillet. Stir until combined and bring to a light boil.
- Reduce the heat to a simmer, cover the skillet, and cook until the rice is tender, about 17 minutes, stirring occasionally.
- Fluff the rice with a fork and top with the mozzarella cheese. Cover for about 3 minutes to let the cheese melt. Garnish with parsley if desired.
Notes
For creamier texture, stir in a splash of cream or sour cream before serving. Store leftovers in an airtight container; can be frozen for up to 3 months.
