Description

A hearty and comforting Italian Beef and Rice Skillet loaded with seasoned ground beef, savory tomatoes, fluffy rice, and gooey mozzarella cheese, perfect for busy weeknights.


Ingredients

  • 1/2 onion, diced
  • 1 lb. ground beef
  • 15 oz. diced tomatoes, canned
  • 1 1/2 cups mixed veggies (peas and carrots)
  • 3/4 cup white rice
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp garlic salt
  • 1/2 tsp dried basil
  • 1/2 tsp pepper
  • 1 1/2 cups mozzarella cheese

Instructions

  1. Brown the ground beef and onion in a large skillet over medium heat until the beef is no longer pink, draining any excess fat.
  2. Add the diced tomatoes, mixed veggies, rice, broth, oregano, garlic salt, basil, and pepper to the skillet. Stir until combined and bring to a light boil.
  3. Reduce the heat to a simmer, cover the skillet, and cook until the rice is tender, about 17 minutes, stirring occasionally.
  4. Fluff the rice with a fork and top with the mozzarella cheese. Cover for about 3 minutes to let the cheese melt. Garnish with parsley if desired.

Notes

For creamier texture, stir in a splash of cream or sour cream before serving. Store leftovers in an airtight container; can be frozen for up to 3 months.
