Ingredients

- 1 large lemon (zest and juice)
- 1 tablespoon finely chopped fresh herbs (such as parsley or dill)
- 1 clove garlic (minced)
- 4 six-ounce salmon fillets (skin-on)
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper.
- Finely grate the zest of 1/2 large lemon into a bowl and juice the other half. Cut the remaining lemon into wedges.
- Combine the lemon, herbs, and garlic in the bowl.
- Pat the salmon fillets dry and place on the baking sheet. Brush with olive oil and season with salt and pepper. Spoon the lemon mixture over the salmon.
- Bake for 12 to 15 minutes until the salmon is opaque and flakes easily. Use an instant-read thermometer to check for desired doneness (120°F to 145°F).
- Serve with lemon wedges and enjoy!

For extra flavor, consider marinating the salmon prior to baking. Substitutions can include different herbs or the option to grill the salmon.
