Ingredients

  • 2 chicken breasts, cooked and shredded finely
  • 1 cup red bell pepper, diced

  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup light mayo
  • 1/4 cup plain non-fat Greek yogurt
  • 2 tbsp salsa
  • 1 tbsp taco seasoning
  • 1 lime, juiced

Instructions

  1. Finely shred the cooked chicken breast into bite-sized pieces.
  2. Finely dice the red bell pepper and onion, and chop the cilantro.
  3. Drain and rinse the black beans to remove any excess sodium.
  4. In a large mixing bowl, combine the light mayo, Greek yogurt, taco seasoning, salsa, and lime juice. Whisk until smooth and creamy.
  5. Gently fold in the shredded chicken, red bell pepper, onion, cilantro, corn, and black beans, ensuring everything is well incorporated.
