Description

A warm and gooey baked feta cheese dish combined with olives and sun-dried tomatoes, perfect for parties and cozy evenings.


Ingredients

  • 8 ounces block feta cheese
  • 1 cup pitted olives, drained and halved
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1/3 cup extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • Pinch red pepper flakes
  • Kosher salt and freshly ground black pepper, to taste
  • Roughly chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the feta cheese in a small baking dish.
  3. In a medium mixing bowl, mix the olives, sun-dried tomatoes, olive oil, garlic, oregano, thyme, basil, red pepper flakes, salt, and pepper.
  4. Pour this mixture over the feta, ensuring it’s fully coated.
  5. Bake for 20 to 25 minutes until the feta is softened.
  6. Optionally, broil for 1 to 2 minutes for a lightly browned top.
  7. Garnish with parsley and serve with crostini or sliced cucumber.

Notes

For extra flavor, marinate the olives in red wine vinegar a day before. Store leftovers in an airtight container in the fridge for up to 4 days.
