Ingredients

- 1 bunch kale, chopped
- 1 can white beans, drained and rinsed
- 1 lb sausage, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onion and garlic, sautéing until translucent, about 4 to 6 minutes.
- Add the sausage and cook until browned.
- Stir in the kale and cook until wilted.
- Add white beans, diced tomatoes, vegetable broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Serve warm.
Notes
Finish with a drizzle of olive oil or a squeeze of lemon for added flavor. Store in an airtight container for up to 4 days.
