Ingredients

  • 1 (8oz) box of frilly protein pasta (like Loppdy Loops or Campanelle, gluten-free if needed)
  • 1/2 cup bone broth
  • 1 egg
  • 1/2 cup parmesan cheese (shredded, plant-based if needed)
  • 1 (8oz) jar high protein pesto (plant-based if needed)
  • 1.5 pounds chicken breasts (or 3 chicken breasts)
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 garlic cloves

Instructions

  1. Marinate the chicken breasts with lemon juice, olive oil, salt, and chopped garlic cloves in a bag or bowl while the pasta cooks.
  2. Boil the protein pasta in heavily salted water according to the package directions, then strain and rinse well with hot water.
  3. In the pot, return the pasta, add a splash of bone broth, and cover to keep it hot.
  4. Grill the marinated chicken for 5-10 minutes per side, ensuring it reaches an internal temperature of 165°F, then let rest for 5 minutes.
  5. In a small bowl, mix parmesan cheese and egg. Over low heat, stir the hot pasta with another splash of bone broth, then quickly blend in the cheese-egg mixture until smooth.
  6. Add the high protein pesto and remaining bone broth, stirring until well combined.
  7. Top the creamy pesto pasta with grilled chicken and serve.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat on the stove with a splash of water or broth.
