Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together miso paste, soy sauce, and sesame oil.
- Add the cubed tofu and coat thoroughly; marinate for 10 minutes.
- Spread marinated tofu onto a lined baking sheet in a single layer.
- Roast tofu for 25 minutes, flipping halfway through.
- Steam or lightly sauté seasonal vegetables until tender, about 5-7 minutes.
- Cook brown rice according to package instructions.
