Delicious and flavorful spiced chicken tenders, perfect for any gathering or weeknight dinner.
Ingredients

- 900 g chicken tenders (about 2 lbs)
- 3 tablespoons olive oil
- 5 teaspoons sweet paprika
- 1 teaspoon cayenne pepper or chili powder
- 1.5 teaspoons salt
- 1 teaspoon allspice (optional)
- 1 teaspoon coriander seed powder
- 1 teaspoon black pepper
- 2 garlic cloves (finely diced or grated)
- 1 tablespoon tomato paste or purée
- Zest + juice from one lime (for marinade)
- Juice from a second lime (when serving)
Instructions
- Mix the marinade ingredients in a large bowl. Rinse the chicken and cut larger pieces in half.
- Rub the chicken with the marinade, cover with cling wrap, and refrigerate for at least one hour.
- For skillet cooking, heat one teaspoon of coconut oil, fry chicken for 4 minutes on each side, and avoid overcrowding the pan.
- For grilling, preheat the grill and cook chicken for 4 minutes on each side on medium/high heat with the lid on.
- Remove cooked chicken to a serving plate and drizzle with lime juice before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
