Description

Delicious and flavorful spiced chicken tenders, perfect for any gathering or weeknight dinner.


Ingredients

Scale
  • 900 g chicken tenders (about 2 lbs)
  • 3 tablespoons olive oil
  • 5 teaspoons sweet paprika
  • 1 teaspoon cayenne pepper or chili powder
  • 1.5 teaspoons salt
  • 1 teaspoon allspice (optional)
  • 1 teaspoon coriander seed powder
  • 1 teaspoon black pepper
  • 2 garlic cloves (finely diced or grated)
  • 1 tablespoon tomato paste or purée
  • Zest + juice from one lime (for marinade)
  • Juice from a second lime (when serving)

Instructions

  1. Mix the marinade ingredients in a large bowl. Rinse the chicken and cut larger pieces in half.
  2. Rub the chicken with the marinade, cover with cling wrap, and refrigerate for at least one hour.
  3. For skillet cooking, heat one teaspoon of coconut oil, fry chicken for 4 minutes on each side, and avoid overcrowding the pan.
  4. For grilling, preheat the grill and cook chicken for 4 minutes on each side on medium/high heat with the lid on.
  5. Remove cooked chicken to a serving plate and drizzle with lime juice before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
