Description

A cozy meal featuring golden-brown turkey sausage patties paired with roasted sweet potato, perfect for any time of day.


Ingredients

Scale
  • 1 medium to large sweet potato, peeled and diced into cubes
  • 1 lb ground turkey
  • 1 clove grated garlic
  • 1 medium white onion, finely diced
  • 1 teaspoon mixed dried herbs (e.g. Italian blend)
  • â…” teaspoon sea salt
  • ½ teaspoon white pepper
  • 1 teaspoon turmeric powder (optional)
  • A pinch of nutmeg (optional)
  • 2 tablespoons tapioca flour (or cassava flour)

Instructions

  1. Boil a kettle with hot water, add the cubed sweet potato to a pot with boiling water and ½ teaspoon of salt. Cook over medium heat for 10–12 minutes until soft. Strain and set aside to cool.
  2. Preheat the oven to 200 C / 400 F.
  3. Mash enough sweet potato to tightly pack 1 cup or so. Combine with all other ingredients (except flour) in a bowl and mix. Add the tapioca or cassava flour and mix until combined.
  4. Line a roasting tray with baking paper and brush with oil. Roll the mixture into small patties and place them on the tray. You should yield around 12 patties.
  5. Bake the patties for 25–30 minutes until browned on the bottom and golden on top. Cool before transferring to a container, or enjoy immediately.

Notes

For added flavor, consider adding spices like cumin or paprika. Store in an airtight container for up to 4 days in the fridge or freeze for up to three months.
