Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 cup packed brown sugar
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup peppermint candy canes, crushed (for peppermint cookies)
  • 1 cup cocoa powder (for chocolate crinkle cookies)
  • 1 teaspoon ground ginger (for gingerbread men)
  • 1 teaspoon ground cinnamon (for gingerbread men)
  • 1/2 cup confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, and baking powder; set aside.
  3. In a large bowl, cream together the butter, white sugar, and brown sugar until smooth and fluffy.
  4. Beat in the salt, vanilla extract, and eggs one at a time.
  5. Gradually blend in the dry ingredients until just combined.
  6. For peppermint cookies, fold in the crushed candy canes; for chocolate crinkles, mix in cocoa powder; for gingerbread men, add the ginger and cinnamon.
  7. Drop spoonfuls of dough onto baking sheets lined with parchment paper.
  8. Bake for 8-10 minutes or until edges are golden and centers are soft.
  9. Let cool, then dust with confectioners’ sugar or decorate as desired.
