Description
A quick and delicious honey garlic shrimp stir fry that’s perfect for busy weeknights.
Ingredients

- 1 Tbsp olive oil
- 1 ½ lb medium shrimp (peeled and deveined)
- 1 lb asparagus (trimmed and cut into 1-inch pieces)
- Salt and pepper (to taste)
- ¼ cup reduced sodium soy sauce
- 1 Tbsp rice vinegar
- 2 Tbsp honey
- 4 cloves garlic (minced)
- 2 tsp fresh ginger (minced)
- 1–2 tsp cornstarch (to thicken sauce)
Instructions
- In a small bowl, whisk together soy sauce, rice vinegar, honey, garlic, ginger, and cornstarch. Set aside.
- In a large skillet over medium-high heat, drizzle olive oil and cook the shrimp until they just start to turn pink, about 3 minutes.
- Add the asparagus and season with salt and pepper. Cook until tender, about 2 to 3 more minutes.
- Toss in your sauce and continue to cook until the sauce thickens and shrimp and asparagus are fully coated, about 2 to 3 minutes.
- Remove from heat and garnish with sesame seeds and black pepper, if desired. Serve immediately and enjoy!
Notes
Serve with rice or noodles to soak up the sauce. Can be stored for 2-3 days in the refrigerator.
