Ingredients

  • 2 pounds boneless and skinless salmon
  • 1/3 cup whole grain mustard
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely chopped fresh parsley
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon Kosher salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F or grill to medium heat.
  2. Prepare honey mustard sauce by whisking together all ingredients; let rest for 5 minutes.
  3. Line a baking sheet with aluminum foil and mist with cooking spray.
  4. Place salmon in the center and cover with honey mustard sauce, reserving a tablespoon for brushing later.
  5. Fold foil to create a sealed packet, leaving a little headspace.
  6. For oven: Bake for 14-15 minutes, then broil for 2-3 minutes. For grill: Grill for 12-14 minutes, then cook an additional 3-4 minutes.
  7. Check for flakiness with a fork and sprinkle with parsley before serving. Optionally, add lemon zest for brightness.
