- 2 pounds boneless and skinless salmon
- 1/3 cup whole grain mustard
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon finely chopped fresh parsley
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon Kosher salt
- 1/8 teaspoon black pepper
Instructions
- Preheat oven to 375°F or grill to medium heat.
- Prepare honey mustard sauce by whisking together all ingredients; let rest for 5 minutes.
- Line a baking sheet with aluminum foil and mist with cooking spray.
- Place salmon in the center and cover with honey mustard sauce, reserving a tablespoon for brushing later.
- Fold foil to create a sealed packet, leaving a little headspace.
- For oven: Bake for 14-15 minutes, then broil for 2-3 minutes. For grill: Grill for 12-14 minutes, then cook an additional 3-4 minutes.
- Check for flakiness with a fork and sprinkle with parsley before serving. Optionally, add lemon zest for brightness.
