A cozy and delicious family favorite, these Hot Honey Ground Beef Bowls combine roasted sweet potatoes, savory ground beef, and creamy cottage cheese, all topped with a kick of hot honey.
Ingredients

- 1 1/2 lbs sweet potato, peeled and diced into ~1/4″ cubes
- Salt, to taste
- Pepper, to taste
- Cinnamon, to taste
- 1 lb 93/7 lean ground beef
- 1 tbsp tomato paste
- 1 tbsp taco seasoning
- 2 cups 2% low-fat cottage cheese
- 4 small avocados
- 2 tbsp hot honey
Instructions
- Preheat your oven to 425°F (220°C) and line a half baking sheet with parchment paper.
- Place the diced sweet potatoes on the baking sheet, lightly spray with cooking spray, and season with salt, pepper, and cinnamon. Bake for 30 minutes, flipping halfway through.
- While the sweet potatoes are baking, heat a frying pan over medium-high heat and add the ground beef, cooking for about 5 minutes. Drain excess liquid.
- Mix in the tomato paste, taco seasoning, and a splash of water. Cook for another 1-2 minutes, stirring to combine. Remove from heat.
- To build your bowl, layer the roasted sweet potatoes, taco beef, and cottage cheese. Top with avocado slices and drizzle with hot honey. Enjoy!
Notes
For added flavor, try adding chopped cilantro or lime juice before serving. These bowls can also be made with ground turkey or plant-based protein.
