Description

A nutritious green soup packed with kale, broccoli, and spinach, perfect for a healthy immune boost.

Ingredients

Scale
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 leek (white part only), diced
  • 1 medium fennel, chopped
  • 2 celery stems, roughly chopped
  • 5 garlic cloves, roughly minced
  • 3/4 tsp all spice powder (or mixed spice)
  • 3/4 tsp cumin powder (or coriander)
  • 1 medium potato, peeled and cubed (1.5 cm)
  • 1 head broccoli, florets (peel and chop stalk too)
  • 2 1/2 tsp cooking/kosher salt
  • 3/4 tsp black pepper
  • 1.75 litres/quarts water
  • 1 cup frozen peas
  • 5 cups tightly packed kale leaves, roughly chopped
  • 5 cups tightly packed baby spinach
  • 3/4 cup thickened cream
  • 2 tbsp sunflower seeds, toasted (or croutons, or other toasted nuts)
  • Cream and/or olive oil for drizzling

Instructions

  1. Heat the olive oil in a very large pot over medium-high heat. Add onions, leek, celery, garlic, and fennel, cooking for about 5 minutes until softened.
  2. Stir in the all spice and cumin, cooking for another minute to release their flavors.
  3. Pour in the water, add the potatoes, broccoli, salt, and black pepper. Stir everything together and bring it to a simmer. Let it cook uncovered for 7 minutes until the broccoli is tender.
  4. Toss in the frozen peas and simmer for an additional minute.
  5. Remove the pot from the heat. Add the kale, pushing it down into the liquid. Blitz everything with a stick blender until it reaches a mostly smooth consistency, with a few green bits left for texture. Repeat this step after adding the baby spinach.
  6. Stir in the thickened cream. Ladle the soup into bowls, drizzle with extra cream or olive oil, and sprinkle with toasted sunflower seeds.

Notes

This soup can be made ahead of time and freezes well. Add some lemon juice before serving to brighten flavors.

Enjoying Your Green Goddess Soup

This sumptuous soup is perfect on its own or paired with crusty bread for a delightful meal. Consider serving it with a zesty side salad for an extra crunch!

Storing Your Scrumptious Leftovers

If you have any leftovers (which is rare!), simply allow the soup to cool, then store it in an airtight container in the refrigerator. It will keep well for about 3 days. The flavors continue to develop, making it even more delicious the next day!

Handy Tips for Making the Most of Your Soup

  • You can make this soup ahead of time; it freezes beautifully! Just remember to leave out the cream until you’re ready to serve.
  • Feel free to swap in your favorite greens, like Swiss chard or collard greens, depending on what you have on hand.
  • Adding some lemon juice or zest right before serving can brighten up the flavors beautifully!

Variations for Your Green Goddess Creation

Want to mix things up? Try adding diced zucchini, or even some cooked quinoa or rice for added texture and heartiness. You could also switch things up with curry powder instead of allspice for a different flavor profile altogether.

Frequently Asked Questions

Can I use fresh peas instead of frozen ones?
Absolutely! Just adjust the cooking time slightly, as fresh peas will cook faster than frozen ones.

Is it possible to make this vegan?
Yes! Simply replace the thickened cream with coconut milk or a cashew cream for a vegan-friendly version.

What if I don’t have a stick blender?
You can carefully transfer the soup to a regular blender in batches. Just make sure to let it cool a bit before blending to prevent any accidents!

Gather the family around and enjoy this delicious Immunity Boosting Green Goddess Soup, nurturing your bodies and hearts with every wholesome bite. It’s a reminder that taking care of ourselves can be both easy and comforting!
