Instructions
- Preheat your oven to 400°F (200°C).
- On a lightly floured surface, roll out the puff pastry until 1/8 inch thick; cut into circles.
- Place pastry circles on a baking sheet and bake for 12-15 minutes until golden and flaky.
- Meanwhile, heat olive oil in a skillet over medium heat; sauté spinach until wilted.
- Mix cream cheese into the wilted spinach until smooth.
- In a separate bowl, whisk together eggs with salt and pepper until airy.
- Fill each pastry shell with the spinach mixture, then pour egg mixture on top.
- Sprinkle Parmesan cheese over each pastry and return to the oven for 15-18 minutes until eggs are set and tops are golden.
- Garnish with fresh herbs and serve warm.
Notes
For an extra layer of flavor, add crushed red pepper flakes to the spinach. Use a mix of cheeses for added taste.
