Description

A delightful blend of crispy pastry, creamy filling, and fluffy eggs, perfect for a cozy family meal.


Ingredients

  • 1 sheet puff pastry
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the puff pastry until 1/8 inch thick; cut into circles.
  3. Place pastry circles on a baking sheet and bake for 12-15 minutes until golden and flaky.
  4. Meanwhile, heat olive oil in a skillet over medium heat; sauté spinach until wilted.
  5. Mix cream cheese into the wilted spinach until smooth.
  6. In a separate bowl, whisk together eggs with salt and pepper until airy.
  7. Fill each pastry shell with the spinach mixture, then pour egg mixture on top.
  8. Sprinkle Parmesan cheese over each pastry and return to the oven for 15-18 minutes until eggs are set and tops are golden.
  9. Garnish with fresh herbs and serve warm.

Notes

For an extra layer of flavor, add crushed red pepper flakes to the spinach. Use a mix of cheeses for added taste.
