Description
These fun, seasonal quesadillas are filled with ooey-gooey cheese and playful pumpkin faces, perfect for Halloween and family-friendly meals.

- 10 – 8 inch flour tortillas
- 2 cups shredded colby jack cheese
- 4 inch pumpkin cookie cutter
Instructions
- Cut out 2 pumpkins from each tortilla using the pumpkin cookie cutter and set the cutouts aside.
- Carve fun faces into half of the pumpkin-shaped tortillas using a sharp knife.
- Heat a large skillet over medium heat and place one uncut pumpkin-shaped tortilla in the skillet.
- Sprinkle cheese over the top of this tortilla.
- Place one carved pumpkin face tortilla on top of the cheese side down.
- Once the cheese starts to melt, carefully flip the pumpkin face tortilla over to rest on top of the melted cheese.
- Arrange the pumpkins so that their stumps face opposite directions.
- Repeat the process for the remaining tortillas.
- Serve warm with your favorite dipping sauce or zesty salsa.
Notes
Use fresh tortillas and quality cheese for the best flavor. Feel free to experiment with different cheeses or add extras like cooked chicken or sautéed bell peppers.
