A Family-Friendly Recipe That Delivers

This Keto Chicken Casserole is not only super easy to make, but it also brings everyone together, creating a sense of warmth and connection. It’s rich in protein, loaded with cheesy goodness, and perfect for a healthy dinner. Let’s get cooking!

How to Make Keto Chicken Casserole

Ingredients:

  • 450 grams Boneless Chicken Leg and Thigh Meat
  • 80 grams Streaky Bacon
  • 200 grams White Mushrooms
  • 50 grams Cream Cheese
  • 100 grams Cheddar Cheese
  • 100 grams Shredded Mozzarella
  • 100 ml Heavy Cream
  • 1 Tsp Smoked Paprika
  • 1 Tsp Onion & Garlic Powder
  • 1/2 Tsp Cayenne Pepper
  • 1/2 Tsp Black Pepper
  • Salt to Taste
  • 1 Tsp Chopped Parsley

Directions:

  1. Begin by chopping the bacon into small, bite-sized pieces. Do the same for the chicken, and slice the mushrooms. Grate the cheddar cheese, and chop up the parsley as well.
  2. In a cold frying pan or wok, add the bacon, then turn on the stove to medium heat. Cook the bacon until it’s crispy, which may take a little time as it begins to release its fat. Once done, remove the bacon and set it aside.
  3. With some bacon fat still in the pan (remove excess if necessary), add the chicken pieces. Season the chicken with salt, pepper, smoked paprika, onion, garlic powder, and cayenne pepper. Mix everything well.
  4. As the chicken nears completion, add the sliced mushrooms and sauté. The mushrooms will release their moisture, and once they do, stir in the cream cheese and grated cheddar.
  5. If the mushrooms aren’t releasing much liquid, add a splash or two of water to help form a delicious cheese sauce by emulsifying with the cream cheese and cheddar. If you’re outside India, add the heavy cream at this point and cook until the sauce thickens. For those in India using Amul cream, reduce the sauce first and then add the cream off the heat.
  6. Once you have a nice thick sauce, stir in the chopped parsley. Now, transfer everything into an oven-proof dish, top with crispy bacon, and sprinkle shredded mozzarella cheese over it.
  7. Bake in a preheated oven on high heat or broil until the cheese is melted and golden brown. Remember, everything is already cooked, so you just want to brown that cheese!
  8. Serve warm and enjoy the warmth of family flavors.

Serving Suggestions for your Comforting Casserole

This Keto Chicken Casserole shines best when served right out of the oven, bubbling and golden. Pair it with a simple side salad or steamed vegetables to keep things light and refreshing. You could even serve it over cauliflower rice for extra low-carb magic.

Storing Your Delicious Casserole

Leftovers? No problem! Store any uneaten portions in an airtight container in the fridge for up to 3 days. You can also freeze portions for later enjoyment. Just make sure to reheat thoroughly before serving again.

Smart Tips to Perfect Your Casserole

  • To save time, prep your ingredients in advance so you can quickly toss everything together when you’re ready to cook.
  • Feel free to experiment with different cheeses, like Monterey Jack or a spicy pepper jack, to add extra flavor.
