Description
Lasagna Soup combines classic Italian flavors in a quick and hearty dish that’s perfect for busy weeknights.
Ingredients

- 1/2 pound lean ground beef
- 1/2 pound ground Italian sausage
- Salt and freshly ground black pepper, to taste
- 1 yellow onion, chopped
- 1 Tablespoon olive oil
- 3 cloves garlic, minced
- 2 Tablespoons tomato paste
- 1 recipe homemade marinara sauce (or 24 ounces store-bought marinara)
- 1/4 teaspoon red pepper flakes
- 2 Tablespoons fresh parsley, chopped (or 2 tsp dried)
- 1/2 teaspoon dried oregano
- 1 teaspoon dried basil
- 7 cups low-sodium chicken broth (or vegetable broth)
- 9 lasagna noodles, broken into pieces
- 2 cups fresh spinach leaves (optional)
- 10 ounces ricotta cheese (or cottage cheese)
- 1 cup shredded mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
- Fresh basil for serving
Instructions
- In a large pot over medium-high heat, cook the ground beef and sausage until browned. Season with salt and pepper while cooking. Once browned, drain the grease and remove the meat from the pot.
- In the same pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until tender. Add minced garlic and cook for another minute until fragrant.
- Stir in the tomato paste, marinara sauce, spices, and broth while scraping any brown bits from the bottom of the pot. Return the cooked meat and bring to a boil.
- Once boiling, add the broken lasagna noodles and reduce the heat to medium-low. Cook until noodles are tender, about 10-12 minutes. If using spinach, stir it in during the last couple of minutes of cooking.
- In a small bowl, mix together mozzarella, Parmesan, and ricotta cheeses until well blended.
- Ladle the soup into bowls and top each with a scoop of the cheese mixture. Garnish with fresh basil and enjoy!
Notes
Serve with crusty garlic bread or a side salad. Leftovers can be stored for up to 3 days in the fridge.
