Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup orzo pasta
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until soft, about 5 minutes.
  2. Stir in the garlic, thyme, and oregano, cooking for another minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the shredded chicken and orzo, reducing heat to a simmer. Cook until the orzo is tender, about 10 minutes.
  5. Stir in the lemon juice and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.
