- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced

- 1 teaspoon dried oregano
- 4 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup orzo pasta
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until soft, about 5 minutes.
- Stir in the garlic, thyme, and oregano, cooking for another minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken and orzo, reducing heat to a simmer. Cook until the orzo is tender, about 10 minutes.
- Stir in the lemon juice and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
