- 1 cup plain yogurt
- 1 cup sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together the yogurt, sugar, eggs, oil, lemon zest, and vanilla extract until smooth.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, until golden and a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Mix the powdered sugar and lemon juice in a small bowl and drizzle over the cooled cake.
- Slice and serve.
Notes
For extra flavor, use Greek yogurt and consider adding fresh berries or spices for seasonal twists.
