Description

A moist and zesty lemon yogurt cake that’s perfect for any occasion.


Ingredients

  • 1 cup plain yogurt
  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together the yogurt, sugar, eggs, oil, lemon zest, and vanilla extract until smooth.
  3. In another bowl, combine the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes, until golden and a toothpick comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. Mix the powdered sugar and lemon juice in a small bowl and drizzle over the cooled cake.
  8. Slice and serve.
