- 1 cup plain yogurt (preferably Greek yogurt)
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 4 large eggs, separated
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar (optional)
- 1/2 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract (for whipped topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan with parchment paper.
- In a large mixing bowl, whisk together the yogurt, vegetable oil, and vanilla extract. Add in the egg yolks along with granulated sugar, stirring until everything is smooth and unified.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients, taking care to stir gently.
- In a clean bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add a tablespoon of sugar and continue whisking until you achieve stiff peaks.
- Gently fold the egg whites into your cake batter in two or three additions.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- For the whipped topping, beat together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Once the cake is cool, spread the whipped cream over the top and serve with fresh berries or a dusting of powdered sugar.
Notes
For an even fluffier cake, use room temperature egg yolks and whites. Infuse yogurt with citrus zest for added flavor.
