Description

A light and fluffy cake made with yogurt that melts in your mouth, perfect for cozy afternoons and serves as a delightful dessert.


Ingredients

  • 1 cup plain yogurt (preferably Greek yogurt)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 4 large eggs, separated
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar (optional)
  • 1/2 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for whipped topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan with parchment paper.
  2. In a large mixing bowl, whisk together the yogurt, vegetable oil, and vanilla extract. Add in the egg yolks along with granulated sugar, stirring until everything is smooth and unified.
  3. In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients, taking care to stir gently.
  4. In a clean bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add a tablespoon of sugar and continue whisking until you achieve stiff peaks.
  5. Gently fold the egg whites into your cake batter in two or three additions.
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  8. For the whipped topping, beat together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Once the cake is cool, spread the whipped cream over the top and serve with fresh berries or a dusting of powdered sugar.

Notes

For an even fluffier cake, use room temperature egg yolks and whites. Infuse yogurt with citrus zest for added flavor.
