Description

A hearty and flavorful Beef & Orzo dish that is perfect for weeknight dinners or family gatherings, packed with protein and nutrients.


Ingredients

  • 1/2 teaspoon salt
  • 1 lb lean ground beef
  • 1 onion, finely chopped
  • 24 garlic cloves, minced
  • 1 (14 1/2 ounce) can tomatoes
  • 1 1/2 cups beef broth
  • 1 teaspoon minced fresh oregano or 1/2 teaspoon crumbled dried oregano
  • 1/4 teaspoon pepper
  • 8 ounces dried orzo pasta (1 cup)
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 1/23/4 cup grated parmesan cheese

Instructions

  1. Sprinkle salt into a 10 to 12-inch frying pan over medium-high heat.
  2. Crumble beef into the pan and cook, stirring often, until the meat begins to brown, about 3 to 5 minutes.
  3. Reduce heat to medium, then stir in onion, continuing to cook until the onion is soft but not brown, about 5 minutes.
  4. Spoon off and discard any excess fat.
  5. Add garlic, tomatoes, beef broth, oregano, and pepper.
  6. Bring the mixture to a boil, then stir in the pasta.
  7. Reduce heat, cover, and simmer gently until the pasta is tender to bite, about 10 to 12 minutes.
  8. Meanwhile, squeeze as much liquid as possible from the spinach.
  9. Stir spinach into the pasta mixture just until heated through.
  10. Serve with cheese sprinkled on top to taste.

Notes

For a creamier consistency, stir in a splash of cream or milk at the end. Don’t skip browning the meat; it adds depth of flavor.
