- 3 Cloves Garlic, mashed
- 1 Zucchini, chopped (~3/4 cup)
- 1 Orange Bell Pepper, chopped
- 3/4 Cup Cherry Tomatoes, halved
- 1/4 Cup Kalamata Olives, sliced
- 1 Tablespoon Olive Oil
- 1/2 Red Onion, diced
- 1 Pound Ground Beef
- 2 Teaspoon Dried Oregano
- 1 Teaspoon Cumin
- 1 Teaspoon Paprika
- 1 Teaspoon Kosher Salt
- 1/2 Teaspoon Ground Black Pepper
- 1/2 Cup Feta Cheese, crumbled
- 2 Tablespoons Parsley, chopped
- 1/4 Cup Lemon Juice
- 1/3 Cup Olive Oil
- 3 Tablespoons Tahini
- 2 Tablespoons Honey
- 2 Tablespoons Red Wine Vinegar
- 1 Clove Garlic, mashed
- 1 Teaspoon Sea Salt
- 1 Teaspoon Black Pepper
- Water, to thin as needed
Instructions
- Prepare the sauce by adding all sauce ingredients to a small blender and blending until creamy and smooth. Add water to thin if needed, then set aside.
- Mash garlic and chop zucchini, bell pepper, tomatoes, olives, and red onion.
- Heat olive oil in a large pan over medium heat.
- Add red onion and sauté for 3 minutes, then add garlic and stir for 15 seconds.
- Add ground beef, breaking it into tiny pieces and stirring until cooked through.
- Stir in bell pepper, zucchini, tomatoes, and seasonings (oregano, cumin, paprika, salt, and pepper) and continue cooking for another 5 minutes.
- Mix in olives and feta cheese, remove from heat, and divide between bowls.
- Drizzle lemon tahini sauce on top and serve immediately.
Notes
For extra texture, consider toasting some pine nuts or sunflower seeds as a topping. Adjust sauce flavors by adding more lemon juice or honey based on your preference.
