Ingredients

  • 3 Cloves Garlic, mashed
  • 1 Zucchini, chopped (~3/4 cup)
  • 1 Orange Bell Pepper, chopped
  • 3/4 Cup Cherry Tomatoes, halved
  • 1/4 Cup Kalamata Olives, sliced
  • 1 Tablespoon Olive Oil
  • 1/2 Red Onion, diced
  • 1 Pound Ground Beef
  • 2 Teaspoon Dried Oregano
  • 1 Teaspoon Cumin
  • 1 Teaspoon Paprika
  • 1 Teaspoon Kosher Salt
  • 1/2 Teaspoon Ground Black Pepper
  • 1/2 Cup Feta Cheese, crumbled
  • 2 Tablespoons Parsley, chopped
  • 1/4 Cup Lemon Juice
  • 1/3 Cup Olive Oil
  • 3 Tablespoons Tahini
  • 2 Tablespoons Honey
  • 2 Tablespoons Red Wine Vinegar
  • 1 Clove Garlic, mashed
  • 1 Teaspoon Sea Salt
  • 1 Teaspoon Black Pepper
  • Water, to thin as needed

Instructions

  1. Prepare the sauce by adding all sauce ingredients to a small blender and blending until creamy and smooth. Add water to thin if needed, then set aside.
  2. Mash garlic and chop zucchini, bell pepper, tomatoes, olives, and red onion.
  3. Heat olive oil in a large pan over medium heat.
  4. Add red onion and sauté for 3 minutes, then add garlic and stir for 15 seconds.
  5. Add ground beef, breaking it into tiny pieces and stirring until cooked through.
  6. Stir in bell pepper, zucchini, tomatoes, and seasonings (oregano, cumin, paprika, salt, and pepper) and continue cooking for another 5 minutes.
  7. Mix in olives and feta cheese, remove from heat, and divide between bowls.
  8. Drizzle lemon tahini sauce on top and serve immediately.

Notes

For extra texture, consider toasting some pine nuts or sunflower seeds as a topping. Adjust sauce flavors by adding more lemon juice or honey based on your preference.
