Ingredients

- 1 bunch kale, chopped
- 1 can white beans, drained and rinsed
- 1 lb sausage, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the sausage over medium heat. Let it sit undisturbed for a couple of minutes per side to caramelize.
- Add onion and garlic, sautéing until soft while scraping browned bits off the bottom.
- Stir in kale and cook until wilted, adding it in handfuls and covering the pot briefly.
- Add white beans, diced tomatoes, vegetable broth, thyme, salt, and pepper. Taste before salting.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes.
Notes
Serve with crusty bread or a green salad. Can be stored in the fridge for up to 4 days or frozen for up to 3 months.
