Ingredients

- 1 bunch kale, chopped
- 1 can white beans, drained and rinsed
- 1 pound Italian sausage, sliced
- 4 cups vegetable or chicken broth
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes
- 2 carrots, sliced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add the sausage and cook until browned.
- Stir in carrots, diced tomatoes, broth, thyme, kale, and white beans.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Season with salt and pepper to taste before serving.
Notes
For a leaner version, substitute turkey or chicken sausage. This soup can be refrigerated for up to 4 days or frozen for up to 3 months.
