Description

A hearty Mediterranean soup packed with kale, white beans, and sausage that comes together in just 30 minutes.


Ingredients

  • Kale
  • White beans (canned or cooked)
  • Sausage (Italian, chicken, or turkey)
  • Onion
  • Garlic
  • Carrots
  • Celery
  • Vegetable broth
  • Olive oil
  • Salt
  • Pepper
  • Lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, garlic, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Stir in sliced sausage and cook until browned.
  4. Add kale and cook until wilted.
  5. Pour in vegetable broth and add white beans.
  6. Season with salt and pepper and simmer for 30 minutes.
  7. Stir in lemon juice before serving.
