Description
A hearty Mediterranean soup packed with kale, white beans, and sausage that comes together in just 30 minutes.
Ingredients
- Kale
- White beans (canned or cooked)
- Sausage (Italian, chicken, or turkey)
- Onion
- Garlic
- Carrots
- Celery
- Vegetable broth
- Olive oil
- Salt
- Pepper
- Lemon juice
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, garlic, carrots, and celery. Cook until softened, about 5 to 7 minutes.
- Stir in sliced sausage and cook until browned.
- Add kale and cook until wilted.
- Pour in vegetable broth and add white beans.
- Season with salt and pepper and simmer for 30 minutes.
- Stir in lemon juice before serving.
Notes
Serve with crusty bread or a green salad. Refrigerate leftovers for up to 4 days or freeze for up to 3 months.
