Ingredients

- 1 cup lentils (green or brown)
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water.
- Combine lentils and water in a pot and bring to a boil.
- Reduce heat and simmer for about 20-25 minutes or until tender.
- Drain and let cool.
- Combine cooked lentils, cherry tomatoes, cucumber, bell pepper, red onion, and parsley in a large bowl.
- Add feta if using.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the salad and mix well.
- Serve immediately or refrigerate for later.
Notes
For best texture, dress the salad just before serving. This salad keeps well in the fridge for up to 4 days.
