Description

A light yet flavorful dish featuring perfectly seared salmon paired with lemon-infused orzo, ideal for family dinners.


Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 2 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon fillets with salt and pepper, then place them in the skillet and sear for 4-5 minutes on each side.
  3. Remove the salmon from the skillet and set aside to rest.
  4. In the same skillet, add the orzo pasta and toast for 1-2 minutes.
  5. Pour in the broth and bring to a boil.
  6. Reduce the heat, cover, and let simmer for 10-12 minutes until the orzo is al dente.
  7. Fold in the lemon juice and zest.
  8. Return the salmon to the skillet and combine everything, cooking for an additional minute.
  9. Garnish with fresh parsley and serve warm.

For an extra crispy salmon skin, ensure the skillet is hot before adding the fish. Add fresh herbs like thyme or dill for extra flavor.
