Comforting Mediterranean Style Stuffed Cabbage Rolls filled with rice, herbs, and spices, perfect for a cozy evening.

- 1 medium green cabbage
- Water
- 1 cup long grain rice
- 1/2 cup shredded yellow onion
- 1 tomato, chopped or diced
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh dill
- Salt and pepper to taste
- 1 tsp ground cumin, plus more for later
- 1/2 tsp cayenne pepper, more to taste
- 1/2 tsp ground allspice
- 1/4 cup extra virgin olive oil
- 1 15-ounce can tomato sauce, divided
- 1 medium yellow onion, sliced
- 1 to 2 Roma tomatoes, sliced
Instructions
- Remove the first couple of leaves from the cabbage, wash it under cold water, and cut off about a quarter inch from the bottom.
- Place the whole head in boiling water for about two minutes. Peel off the softened leaves and set aside to cool.
- Slice each leaf into halves or thirds, trimming any thick veins that may hinder wrapping.
- In a bowl, mix together the rice, shredded onions, chopped tomatoes, fresh herbs, salt, pepper, spices, olive oil, half of the can of tomato sauce, and a splash of water. Stir until well combined.
- Heat a large Dutch oven, drizzle with olive oil, and line it with sliced onions and tomatoes.
- Take one cabbage leaf, place it coarse side up, add about a teaspoon of the rice mixture at the end, and roll it up snugly. Repeat with remaining leaves and stuffing.
- Layer the rolls seam side down in the pot, pour over the rest of the tomato sauce and enough water to cover the rolls.
- Cover with a small plate and cook on high heat for 5 to 7 minutes. Reduce to low and let it simmer for about 30 minutes.
- Remove the plate and switch to just the lid, cooking for another 15 minutes until liquid is absorbed.
- Let the rolls sit undisturbed before serving.
Notes
For extra flavor, sauté onions and tomatoes before layering. You can also add feta cheese to the filling or use quinoa instead of rice.
