A comforting and flavorful Mississippi Pot Roast made with tender beef, ranch dressing, and pepperoncini, perfect for busy weeknights.
Ingredients

- 1 (3-4 pounds) chuck roast, trimmed
- 1 packet ranch dressing mix
- 1 packet au jus gravy mix
- 1/4 cup butter, salted or unsalted
- 4–5 pepperoncini peppers, whole
Instructions
- Place roast in the slow cooker and sprinkle the top with ranch dressing mix and au jus mix.
- Place pepperoncini on top and add the butter, tucking some under the roast.
- Cook over low heat for 8 hours.
- Serve with noodles, rice or mashed potatoes, reserving a cup of the cooking liquid if needed.
Notes
Serve over mashed potatoes or noodles for maximum sauce absorption. Pair with seasonal vegetables or a salad.
