Description

A refreshing chilled salad combining tender lentils, grated carrots, and a variety of vegetables, enhanced with a lemon and cumin dressing.


Ingredients

  • 1 cup green or brown lentils
  • 2 large carrots, grated
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. Rinse and cook the lentils according to package instructions until tender, then drain and let cool.
  2. Combine the cooked lentils, grated carrots, diced bell pepper, chopped red onion, parsley, and mint in a large bowl.
  3. Whisk together the lemon juice, olive oil, cumin, and coriander in a small bowl, then pour over the salad.
  4. Season with salt and pepper to taste, and toss everything together until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Add a pinch of salt and a squeeze of lemon before serving if flavors have dulled after storage.
