Description

Ingredients

  • Kale, washed and roughly chopped
  • White beans, drained and rinsed
  • Sausage, sliced
  • Onion, diced
  • Garlic, minced
  • Carrots, diced
  • Celery, diced
  • Chicken broth (low sodium preferred)
  • Olive oil
  • Salt
  • Pepper
  • Thyme (fresh or dried)
  • Lemon juice (freshly squeezed)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, carrots, and celery; sauté until softened (about 5 to 7 minutes).
  3. Add minced garlic and cook for another minute.
  4. Add sliced sausage and cook until browned.
  5. Stir in kale, white beans, and chicken broth.
  6. Season with salt, pepper, and thyme.
  7. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  8. Finish with a squeeze of lemon juice before serving.

Notes
