Ingredients
- Kale, washed and roughly chopped
- White beans, drained and rinsed
- Sausage, sliced
- Onion, diced
- Garlic, minced
- Carrots, diced
- Celery, diced
- Chicken broth (low sodium preferred)
- Olive oil
- Salt
- Pepper
- Thyme (fresh or dried)
- Lemon juice (freshly squeezed)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion, carrots, and celery; sauté until softened (about 5 to 7 minutes).
- Add minced garlic and cook for another minute.
- Add sliced sausage and cook until browned.
- Stir in kale, white beans, and chicken broth.
- Season with salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for about 30 minutes.
- Finish with a squeeze of lemon juice before serving.
Notes
Great served with crusty bread and a green salad. Store leftovers in an airtight container in the refrigerator for up to 4 days.
