A comforting, nutrient-dense soup packed with kale, white beans, and Italian sausage, perfect for a hearty weeknight meal.
Ingredients

- 1 bunch kale, chopped
- 1 can white beans, drained and rinsed
- 1 lb Italian sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 can diced tomatoes
- 1 tsp oregano
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat, then add the chopped onion and cook until softened, about 4 minutes.
- Add 2 minced garlic cloves and sauté for 30 seconds until fragrant.
- Push the onion and garlic to the side, add the sliced Italian sausage and brown on both sides, about 6 minutes.
- Stir in the chopped kale and cook until it wilts slightly, about 2 minutes.
- Add the drained white beans, 1 can diced tomatoes (with juices), 4 cups broth, and 1 teaspoon oregano; bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Season with salt and pepper to taste before serving.
Notes
For a creamier texture, reserve half the beans, mash them roughly, and return them to the pot. This soup can also be frozen for up to 3 months.
