Description

A hearty one-pot stew made with lentils, sweet potatoes, and spices, perfect for a quick plant-based dinner.


Ingredients

Scale
  • 1 cup lentils
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Sauté the onion and garlic until soft.
  2. Add the diced sweet potatoes, lentils, black beans, corn, cumin, chili powder, and vegetable broth.
  3. Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh cilantro if desired before serving.

Notes

Control thickness by adjusting broth. Use consistent dice for sweet potatoes for even cooking.
