- 1 can black beans, drained and rinsed
- 1 cup frozen corn
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Sauté the onion and garlic until soft.
- Add the diced sweet potatoes, lentils, black beans, corn, cumin, chili powder, and vegetable broth.
- Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro if desired before serving.
