Description

Delicious and nutritious muffins made with ripe bananas and peanut butter, perfect for a healthy breakfast or snack.


Ingredients

  • 3 large ripe bananas
  • 1/2 cup natural peanut butter
  • 4 tablespoons honey
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/4 cups oat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 425°F and line a muffin tin with 12 muffin cups, spraying them with oil.
  2. In a large bowl, combine bananas, peanut butter, honey, eggs, and vanilla; stir until well combined.
  3. Add oat flour, baking powder, and salt; fold to combine, then add chocolate chips.
  4. Scoop batter into muffin cups, filling just shy of the top.
  5. Bake for 5 minutes at 425°F, then lower the temperature to 350°F without opening the door, and bake for an additional 15 minutes.
  6. Remove from oven and cool for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra nutrition, add chopped nuts or seeds. Store in an airtight container in the fridge for up to a week.
