Description

Delightful, protein-packed cottage cheese egg bites that are quick to prepare and perfect for meal prepping.


Ingredients

Scale
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1/3 cup cottage cheese (4 oz / 110 grams)
  • 1/3 cup grated Cheddar cheese (1.5 oz / 40 grams)
  • 1.5 oz diced ham (3540 grams)
  • 1.5 tablespoons chopped spring onions (scallions)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
  2. In a blender, blend the eggs, salt, cottage cheese, and Cheddar until smooth.
  3. Pour the mixture into the muffin cups, filling each about halfway or two-thirds.
  4. Add diced ham and green onions to each cup and stir to combine.
  5. Bake for 20 minutes or until set and golden.
  6. Allow the bites to cool for a few minutes before removing from the tin.

Notes

Experiment with different cheese types and add spices for enhanced flavor. Store leftovers in an airtight container for up to 4 days.
