Ingredients

- 4 large eggs
- 1/4 teaspoon salt
- 1/3 cup cottage cheese (4 oz / 110 grams)
- 1/3 cup grated Cheddar cheese (1.5 oz / 40 grams)
- 1.5 oz diced ham (35–40 grams)
- 1.5 tablespoons chopped spring onions (scallions)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
- In a blender, blend the eggs, salt, cottage cheese, and Cheddar until smooth.
- Pour the mixture into the muffin cups, filling each about halfway or two-thirds.
- Add diced ham and green onions to each cup and stir to combine.
- Bake for 20 minutes or until set and golden.
- Allow the bites to cool for a few minutes before removing from the tin.
Notes
Experiment with different cheese types and add spices for enhanced flavor. Store leftovers in an airtight container for up to 4 days.
