Description

A hearty breakfast featuring smoky chorizo and perfectly poached eggs in a rich tomato sauce, ideal for brunch or dinner.


Ingredients

  • 2 tablespoons olive oil
  • 2 medium onions, minced
  • ½ cup chopped chorizo
  • 2 cups chopped tomatoes
  • ¼ cup red wine
  • 2 cloves garlic, minced
  • Sea salt and pepper, to taste
  • 4 large eggs
  • Optional: kalamata olives, minced parsley, feta, to serve

Instructions

  1. Heat olive oil in a medium-sized skillet over medium-high heat.
  2. Add minced onions and chopped chorizo, cooking for 5-7 minutes until onions are golden brown.
  3. Reduce heat to medium, stir in chopped tomatoes, red wine, and minced garlic, and simmer until thickened, about 5 minutes.
  4. Create wells in the sauce and crack an egg into each well, cover, and cook on low heat for 3-5 minutes until egg whites are set.
  5. Season with salt and pepper, then top with olives, parsley, and crumbled feta before serving.

Notes

For a smokier flavor, use smoked paprika. Adjust spice levels with cayenne pepper or crushed red pepper flakes if desired.
