Ingredients

- 2 tablespoons olive oil
- 2 medium onions, minced
- ½ cup chopped chorizo
- 2 cups chopped tomatoes
- ¼ cup red wine
- 2 cloves garlic, minced
- Sea salt and pepper, to taste
- 4 large eggs
- Optional: kalamata olives, minced parsley, feta, to serve
Instructions
- Heat olive oil in a medium-sized skillet over medium-high heat.
- Add minced onions and chopped chorizo, cooking for 5-7 minutes until onions are golden brown.
- Reduce heat to medium, stir in chopped tomatoes, red wine, and minced garlic, and simmer until thickened, about 5 minutes.
- Create wells in the sauce and crack an egg into each well, cover, and cook on low heat for 3-5 minutes until egg whites are set.
- Season with salt and pepper, then top with olives, parsley, and crumbled feta before serving.
Notes
For a smokier flavor, use smoked paprika. Adjust spice levels with cayenne pepper or crushed red pepper flakes if desired.
